4 summer cupcakes

Today I show you four simple recipes to prepare delights to share with your family and friends!
These are colorful cupcakes very fresh and all dedicated to summer!
Two are inspired by the summer cocktails par excellence, mojito and moscow mule; and two others inspired by coconut, lime and watermelon fruits!

Mojito cupcake

What you need FOR THE BASE:

  • 240 ml of buttermilk
  • a dozen mint leaves
  • 180 g of 00 flour
  • 1 teaspoon of baking powder
  • a pinch of salt
  • 100 g of soft butter
  • 200 g of white sugar
  • 2 eggs
  • peel and juice of half a lime
  • 2 tablespoons of white rum
What you need FOR THE FROSTING:
  • 300 g of soft butter
  • 400 g of powdered sugar
  • 2 tablespoons of lime juice
  • 3 tablespoons of white rum

METHOD:
  1. Pour mint leaves in buttermilk and heat in a saucepan over medium heat. When it starts to produce steam, remove the saucepan from the heat and leave the leaves to infuse for 20-30min. Then pass the buttermilk through a sieve and remove each lump.
  2. Preheat the oven to 180 ° C.
  3. In a bowl, combine flour, baking powder and salt.
  4. Mix the butter with the sugar in a mixer, add the eggs, the lime juice, the zest and the rum.
  5. Slowly add the flour mixture and the buttermilk a little at a time.
  6. Pour the mixture into the muffin pan and bake for about 25min.
  7. While the cupcakes cool, add the butter, adding the icing sugar, lime juice and rum a little at a time.
  8. Fry the cupcakes!

Cupcake Moscow Mule

What you need FOR THE BASE:
  • 85 g of butter
  • 150 g of white sugar
  • 85 g of greek yogurt
  • 3 egg whites
  • 160 g of 00 flour
  • 2 teaspoons of baking powder
  • a teaspoon of grated ginger
  • a pinch of salt
  • 90 ml of ginger beer
  • 30ml of vodka
  • What do you need to have FOR THE FROSTING:
  • 300 g of soft butter
  • 400 g of powdered sugar
  • 4 teaspoons of grated ginger
  • 60 ml of ginger beer
  • 1 teaspoon of lime zest

METHOD:
  1. Preheat the oven to 180 ° C.
  2. In a bowl add flour, baking powder, salt and grated ginger.
  3. Mix the butter and the sugar in a mixer. Add the yogurt, ginger beer and vodka.
  4. Whisk the 3 egg whites and then add them to the previous mixture.
  5. Pour the mixture into the muffin pan and bake for about 20min.
  6. While the cupcakes cool, add the butter, adding the icing sugar, the ginger beer, the grated ginger and the lime zest.
  7. Fry the cupcakes!


Coconut and Lime cupcake

What you need FOR THE BASE:
  • 180 g of 00 flour
  • 1 teaspoon of baking powder
  • half a teaspoon of baking soda
  • a pinch of salt
  • 2 large eggs
  • 200 g of white sugar
  • 100 ml of seed oil
  • 2 teaspoons of lime zest
  • 4 tablespoons of lime juice
  • 1 teaspoon of coconut extract
  • 200 ml of coconut milk
  • What do you need to have FOR THE FROSTING:
  • 250 g of spreadable cheese
  • 100 g of soft butter
  • 1 teaspoon of coconut extract
  • 180 g of powdered sugar
  • 4 tablespoons of coconut flakes
  • a few slices of lime to decorate

METHOD:
  1. Preheat the oven to 180 ° C.
  2. In a bowl, combine flour, baking powder, salt and bicarbonate.
  3. Mix the sugar with the eggs in a mixer. Add the oil, coconut milk, zest and lime juice and coconut extract.
  4. Pour the mixture into the muffin pan and bake for about 20min.
  5. While the cupcakes cool, whip the cream cheese with butter, and the rest of the frosting ingredients.
  6. Fry the cupcakes!

Watermelon cupcake

What you need FOR THE BASE:

  • 100 g of soft butter
  • 180 g of white sugar
  • 3 egg whites
  • half a cup of Greek yogurt
  • a teaspoon of vanilla extract
  • 200g of 00 flour
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • light green food coloring
  • What do you need to have FOR THE FROSTING:
  • 100 g of butter
  • half a glass of vegetable oil
  • 200 g of powdered sugar
  • 1 tablespoon of watermelon extract
  • red food coloring
  • a few drops of chocolate

METHOD:

  1. Preheat the oven to 180 ° C.
  2. In a bowl combine flour, baking powder, salt.
  3. Mix the sugar with the butter in a mixer. Add the yogurt, vanilla and green dye. Apart from whisk the egg whites and add them to the mixture.
  4. Pour the mixture into the muffin pan and bake for about 20min.
  5. While the cupcakes cool, add the butter with the vegetable oil, add the icing sugar, the watermelon extract and at the end the red color.
  6. Fry the cupcakes and add a few drops of chocolate.


Ready! Four different types of fresh, colorful and super delicious cupcakes!
