Struffoli for Christmas
Writing this post was not easy because in the meantime I was assailed by an incredible hunger! In fact, today I reveal the recipe for Struffoli, but this time it is not my recipe but I inherited it directly from my grandmother. These sweets are usually made under Christmas and the origins date back to the city of Naples. There are several variations, some people add to the liqueur dough (grappa or anise), others fry in lard, others still decorate them with candied fruit. In any case, the struffoli are well known throughout Italy and have also arrived in my family that is of Puglia origin. We do them like this:
As you can see the ingredients are measured with the unit of measure of "glass" this because when my grandmother had started to make them did not have a scale to weigh the precise doses, and then began to rely on this method (it works I guarantee it!).
To better work the dough of struffoli I suggest you have a wooden board to place on the table and use as a work surface.

METHOD:
- Pour a glass of milk and dissolve the baking powder and baking soda.
- On a pastry board pour 1 kg of flour and form the classic mound with a hole in the center.
- Add the eggs, sugar, salt and vanillin in the center of the mound of flour and start kneading with your hands.
- Add the milk a little at a time and then the oil and continue to knead.
- Grate half a lemon zest and add it to the mixture.
- Continue to knead the dough until it is firm and smooth. It will not have to be sticky.
- Remove a small portion from the mixture and work it into a serpentine with a diameter of about 1 cm.
- Heat the frying oil.
- With a knife cut small pieces of about 1 cm and other smaller ones from about half a centimeter.
- Fry the struffoli and remove them from the oil when they have taken a color.
- The larger struffoli must be sprinkled with powder sugar, while the smaller ones must be sprinkled with honey and colored sugars.
- The struffoli are ready! Now you can put them in transparent food bags and apply a label with the ingredients listed!
