Lemon cookies with flowers for Mom!

Hello everyone! 

Today I'm talking about a simple recipe to make for Mother's Day!
These are heart-shaped biscuits flavored with lemon and glazed with edible flowers!

As soon as I saw them I fell in love, so elegant and at the same time simple and colorful, they are a perfect gift to express love towards our mother!

Ingredients:
  • 400g of flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of bicarbonate
  • a pinch of salt
  • 200g of butter
  • 200g of sugar
  • 2 eggs
  • vanillin
  • a spoon of lemon juice
  • zest of 1 lemon
  • edible flowers
  • heart molds for biscuits

for the frosting:

  • 2 whites
  • 200g of powdered sugar
  • a teaspoon of lemon juice
  • 1/2 teaspoon of vanilla extract


METHOD:
  1. In a bowl mix the flour, baking powder, bicarbonate, vanillin and salt.
  2. In another bowl mix the sugar together with the butter until a soft mixture is obtained. Add the eggs, juice and zest.
  3. Add the floury mixture to the soft mixture and knead until all is mixed.
  4. Form a dough and wrap it with the film. Leave to rest in the fridge for at least an hour.
  5. In the planetary pour the egg whites and start mixing at medium speed.
  6. When the egg whites start to foam, add the icing sugar a little at a time. Then add the juice and vanilla and mix until you obtain a sufficiently "sticky" mixture typical of the glaze.
  7. Preheat the oven to 180 ° C and then remove the dough from the fridge. Roll it out and cup the biscuits about a half inch high.
  8. Bake the biscuits for about 10 minutes, until they are golden.
  9. Allow the biscuits to cool completely and then glaze them and sprinkle them with the flowers.
